Red Velvet Crinkle Cookies
7 tbsp. butter, room temperature
1 ½ cups brown sugar
1 tsp vanilla extract
3.5 oz. bittersweet chocolate, melted
1 tbsp. red food coloring
1 ¼ cups flour
2 tsp. baking powder
¼ cup cocoa powder
5.5 oz. bittersweet chocolate, roughly chopped
¼ cup granulated sugar
¼ cup powdered sugar
Using an electric mixer, beat butter, brown sugar, and vanilla until light and well blended, 3-5 minutes. Add eggs one at a time, beating well after each addition. Mix for an additional 1-2 minutes until pale and creamy. Add the melted chocolate and food coloring and mix to combine.
Sift together the flour, baking powder, and cocoa powder. Slowly add to the mixer and beat until a smooth dough forms. Fold in the chopped chocolate and chill for 1 hour or until firm.
Preheat oven to 350 degrees. Place white sugar and powdered sugar in two separate small bowls. Roll tablespoons of dough into balls then gently toss them in the white sugar, followed by the powdered sugar. Place them on a parchment lined baking sheet about 2-inches apart.
Bake the cookies for 12-14 minutes or until the the edges are slightly crispy and the center is soft. Makes about 3 dozen.
